Muffins with Brown Sugar Crumble

These muffins are soft, fluffy, and can be mixed with any fruit. They're easy to make, bake beautifully every time, and taste like cozy fall mornings all year long. I used apples in this recipe.
Ingredients
For the Muffins:

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 ½ cups packed brown sugar

1 cup buttermilk

1 large egg
-
½ cup melted butter

1 teaspoon vanilla extract

2 cups diced apples (peeled if desired)
For the Crumble Topping:

½ cup brown sugar
-
⅓ cup all-purpose flour

1 teaspoon cinnamon

2 tablespoons melted butter
Instructions

Preheat Oven
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly. -
Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking soda, salt, and brown sugar. -
Add the Wet Ingredients
Stir in the buttermilk, egg, melted butter, and vanilla extract. Mix until just combined — do not overmix. -
Fold in the Apples
Gently fold in the diced apples until evenly distributed throughout the batter. -
Scoop the Batter
Fill muffin liners about ¾ full with batter. -
Make the Topping
In a small bowl, mix together the brown sugar, flour, cinnamon, and melted butter until crumbly. Sprinkle generously over each muffin. -
Bake
Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. -
Cool and Serve
Let muffins cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
